Dessert for your love: Pot De Creme
We celebrated an early Valentine’s, so tonight we will just be keeping it simple and cozy at our home, relaxing and a little dessert. A tradition I have is to make Rick a special dessert based on his favorite ingredients. This year it is Pot De Creme a French style dessert. Pot de Creme means “pot of custard”, the version I made uses chocolate and coffee, whips up in a blender and needs just a few hours to set in the fridge. I garnished the dessert with shaved chocolate, fresh cream, and raspberries. Ooo la la!
Pot De Creme
Chocolate Chips (one quality bag)
4 eggs at room temperature (very important to be at room temp)
dash of sea salt
splash of vanilla extract
1 cup of hot coffee
In a blender combine the chocolate chips, eggs, salt and vanilla extract. Blend till fairly smooth and then gently pour in the hot coffee. Give it another whirl in the blender and then pour into ramekins or mugs. Mixture will need to set for four hours in the fridge. Serve with your favorite garnishes: whipped cream, more chocolate, nuts, fresh berries, and sprinkle with cinnamon.
